Chocolate Chip Banana Bread
When you have some overripe bananas, it is time to bake banana bread. I have added chocolate chips, vanilla essence and cinnamon to add some extra flavour to the traditional banana bread.
Don’t have to eat all at once, it freezes well.
I used a square tin, as opposed to a traditional loaf pan. This reduced the baking time by about 10 minutes.
Ingredients
- 2 ripe bananas- mashed
- 2 eggs
- 140 g flour
- 140 g sugar
- 140 g butter- softened
- 1 tsp baking powder
- 1 tsp sweet cinnamon
- 1 tsp vanilla essence
- Pinch of salt
- Chocolate chips as desired
Instructions
1. Preheat the oven to 180C / 365F ( 160C / 320F if it is a fan oven)
2. Beat the eggs.
3. Mix the butter and the sugar, add the eggs, then half the flour, baking powder, vanilla, cinnamon, salt and chocolate chips ( if using).
4. Add the mashed bananas, and then the rest of the flour and combine well.
5. Line your tin with baking parchment, pour in the batter, and bake for 50 minutes – if using a loaf tin. Check your banana bread after about 35 minutes, and do a fork/ stick test. If you are using a square tin where your banana bread is more spread out and thinner, it might already be done.
6. Leave to cool for 10 minutes.
