Cold cherry soup

A quick, easy and refreshing soup for those hot summer days when you fancy something light and cooling.

Ingredients

  • 1/2 kg of cherries (frozen or fresh)

  • cinnamon stick

  • 1 tsp vanilla essence

  • 5 whole cloves

  • Pinch of salt

  • 2 tbsp sugar

  • 2 tbsp flour

  • 1.5 dl / 5 oz single cream

  • 2 L / 8.5 cups water

 

Instructions

1. Put the cherries in a pot, add the water, the cinnamon, the sugar, the vanilla, the cloves and the salt.
2. Bring to boil then cook on low heat for 25 minutes.
3. In a small bowl mix together the single cream and flour, and add some of the soup to even out the temperature.
4. Add to the soup, bring it to boil again, then turn off the heat.
5. Your soup is done! Cool it down to room temperature then put it in the fridge as it is best served chilled.
