French toast is the perfect breakfast when you are craving something sweet and indulgent in the morning (and you have time to prepare it).
The sweet and tangy raspberry compote compliments the flavours of the cinnamony French toast, and it only takes five minutes to whip up.
Ingredients
For the french toast
- a few slices of stale white bread
- 2 eggs
- 100 ml of milk
- a dash of cinnamon
- a pinch of salt
- 2 tbsp brown sugar
- 1tsp vanilla essence
For the raspberry compote
- 2 cups of raspberries
- 1 tbsp sugar
- a pinch of salt
- the zest and juice of 1 lemon
Instructions
1. Blend the raspberries with some water then pour into a saucepan
2. Add the lemon zest, lemon juice, salt and sugar, and bring to a boil.
3. Thicken it with corn syrup mixed in with water, adding a little at a time while stirring.
4. Dice the white bread.
5. Whisk together the eggs, milk, brown sugar, vanilla essence, cinnamon and salt.
6. Add to diced bread and mix until all the pieces are covered. It is meant to look like a soggy mess!
7. Heap a spoonful into a heated frying pan coated with a bit of melted butter or oil. Fry until light brown then use a spatula to turn and fry the other side.
8. Serve dusted with icing sugar and covered with a dash of raspberry compote!
