A collection of zucchini recipes

Zucchini also known as courgette is a summer squash that is versatile and easy to cook with. It is a vegetable that is popular in many cuisines around the world, and its culinary uses range from being used raw, cooked, zoodled, stuffed or baked. Zucchini is high in dietary fibre and antioxidants, vitamin A potassium, vitamin C and folate. It also makes a great diet food as it is very low in calories. 
In this post, I will show you six ways to use zucchini in your cooking.

 

Oven-baked parmesan zucchini fries
Shaved zucchini and almond salad
Fried zucchini 
Savoury zucchini pancakes

Oven-baked parmesan zucchini fries 

Parmesan zucchini fries

 

Ingredients

 

  • 6 tbsp breadcrumbs
  • Black pepper to taste
  • 2 tbsp parmesan cheese
  • 4 tbsp plain flour
  • 2 eggs
  • 2 medium zucchinis

 

A note on parmesan cheese- it is already very salty so I recommend not adding any more extra salt to it.

Instructions

 

  1. Slice your zucchini into french fries-sized pieces.
  2. Beat the egg.
  3. Pour the plain flour into a plastic bag.
  4. Pour your breadcrumbs into a flat container, and add the Parmesan cheese and the black pepper. Combine.
  5. Put a handful of zucchini slices into the plastic bag of flour and shake well.
  6. Dip them one by one into the egg and then the parmesan bread crumbs.
  7. Line a baking tray with parchment paper and grease it with a small amount of olive.
  8. Place your breaded zucchini sticks onto the baking tray.
  9. Bake it in the oven until golden brown and crispy. This should take about 20 minutes at 400F.
  10. Serve immediately while it is still hot with Ranch, mayonnaise or your favourite dressing.

 

Zucchini and almond salad

Zucchini and almond salad

 

Ingredients

 

  • 2 medium zucchinis
  • 2 tbsp sliced almonds
  • 2 tbsp white wine vinegar or balsamic vinegar
  • Handful of cherry tomatoes
  • Parmesan cheese
  • Olive oil
  • 1 small shallot finely chopped
  • Chopped parsley and thyme to taste
  • Salt and pepper to taste

 

Instructions

  1. Soak the shallots in vinegar.
  2. Wash your zucchinis well and shave them lengthwise with a potato peeler.
  3. Toast your almond slices in a dry skillet over medium heat for a few minutes, stirring continuously, making sure not to burn them.
  4. Assemble your salad by placing the zucchini shaves onto a large plate, sprinkling the toasted almonds and the shallots over it. Drizzle it with the extra virgin olive oil and sprinkle with the green herbs, salt and pepper.
  5. Decorate with cherry tomatoes and parmesan shaves.

 

Fried zucchini in breadcrumbs

Ingredients

  • 2 medium zucchinis
  • Plain flour
  • 2 eggs
  • Breadcrumbs
  • Oil for frying
  • Salt

 

Instructions

 

  1. Wash the zucchinis and slice them into 1 cm thick slices. Sprinkled them with salt on both sides.
  2. Beat the eggs.
  3. Put a few tablespoons of flour into a flat container. Do the same with the breadcrumbs.
  4. Dip each zucchini slice into the flour, egg and breadcrumbs one by one.
  5. Shallow fry them in oil over medium heat turning halfway through until they are golden brown.

 

Savoury zucchini pancakes

Ingredients

 

  • 2  medium zucchinis
  • Fresh parsley
  • 1 egg
  • Butter and oil to fry
  • Salt and pepper

 

Instructions

 

  1. Grate zucchinis and sprinkle over a generous amount of salt, combine and let it sit.
  2. Finely chop the garlic and the parsley.
  3. Squeeze the water out of the zucchini really well to avoid your pancakes ending up soggy.
  4. Combine all the ingredients.
  5. In a frying pan melt the butter and add the oil.
  6. Heap tablespoons of the mix of the mixture into the frying pan. They will be quite runny and you might want to shape them with a spatula until you end up with small pancakes about 3 cm  thick.
  7. These pancakes will take some time to cook through- fry them at low to medium heat. Cook them on both sides until they are golden brown.

 

Zucchini and sweet corn fritters

Zucchini and sweetcorn fritters

 

Ingredients

 

  • 1 large zucchini
  • 1 egg
  • 200 g of sweetcorn
  • 1 teaspoon of pesto
  • Salt and pepper to taste
  • 1 spring onion
  • 50 g flour
  • 40 ml milk

 

Instructions

 

  1. Great the zucchini and squeeze out the water very well.
  2. Chop the spring onions
  3. Beat  the egg
  4. Combine all the ingredients
  5. Heat the oil in a frying pan
  6. Create burger sized fritters and cook them well, turning halfway through. The mixture will be very wet so you might find it easier to heap them into the pan with a spoon and shape them once in the pan

Chocolate chip zucchini slices

Chocolate chip zucchini slices

 

Ingredients

 

  • 1 small grated zucchini
  • 2 eggs
  • 2 tsp vanilla extract
  • Pinch of salt
  • 1 tsp cinnamon
  • 0.5 tsp baking soda
  • 0.5 tsp baking powder
  • 240 g / 2 cup flour
  • 200 g / 1 cup sugar
  • 100 g chocolate chips
  • 330 g  / 1.5 cup butter melted

 

Instructions

 

  1. Squeeze out some of the water from the shredded zucchini.
  2. Combine the dry ingredients in a mixing bowl.
  3. In another mixing bowl, combine the melted butter, sugar, eggs and vanilla extract.
  4. Stir in the zucchini.
  5. Add the dry ingredients.
  6. Line a baking tray with parchment paper and pour in the mixture.
  7. Bake in the oven at 350 Fahrenheit. Depending on the size of your baking tray and therefore the thickness of the cake this can take anywhere between 35 and 55 minutes.
